How to Make Another Baked Ziti

  1. Brown 1 lb Italian sausage links in a large skillet over medium heat, breaking them up with a spoon. Drain off excess grease.
  2. Remove sausage from skillet and cut into 1/2-inch rounds. Set aside.
  3. Heat 2 tablespoons olive oil in the same skillet. Add 1 medium chopped onion, 3 minced garlic cloves, 1 diced carrot, and 1 diced celery stalk. Sauté until softened, about 5-7 minutes.
  4. Add 1/2 cup dry red wine and simmer until reduced by half, about 2-3 minutes.
  5. Stir in 28 ounces canned crushed tomatoes, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon dried oregano, the cooked sausage, and 1/4 cup chopped fresh parsley.
  6. Simmer for 60 minutes, stirring occasionally, until thickened.
  7. Cook 1 lb ziti pasta according to package directions until al dente. Drain.
  8. Add the cooked pasta to the sauce and stir to combine.
  9. Preheat oven to 400°F (200°C).
  10. Grease a large ovenproof dish with 2 tablespoons of butter.
  11. Layer 1/3 of the pasta mixture in the prepared dish. Sprinkle with 1/3 of the mozzarella cheese.
  12. Repeat layers twice more, ending with a layer of mozzarella.
  13. Pour the beaten eggs evenly over the top of the pasta.
  14. Sprinkle with 1/2 cup grated Parmesan cheese.
  15. Bake for 20-25 minutes, or until bubbly and golden brown.
  16. Let stand for a few minutes before serving.
