How to Make Apple Pecan Bran Muffins

  1. Preheat oven to 400°F (200°C) and grease or line a 12-cup muffin tin.
  2. In a large bowl, whisk together 2 large eggs, 1/4 cup vegetable oil, 1 cup buttermilk or plain yogurt, 1/4 cup molasses, and 2 tablespoons honey.
  3. Stir in 1 cup wheat bran.
  4. In a medium bowl, combine 2 cups pastry flour, 1 cup rolled oats, 2 teaspoons baking powder, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, and 1/4 teaspoon ground nutmeg.
