- 1 medium onion, chopped

How to Make Apple Spiced Meatloaf
- Preheat oven to 350°F (175°C).
- Chop 1 medium onion and 2 cloves garlic. Microwave on high for 2-3 minutes, or until softened.
- In a large bowl, combine the softened onion and garlic with 1 teaspoon dried sage, 1 tablespoon chopped fresh parsley, 1 cup breadcrumbs, ¾ cup unsweetened applesauce, 1 large egg, ½ teaspoon ground cinnamon, ¼ teaspoon ground cardamom, 1 teaspoon salt, and ½ teaspoon black pepper. Mix well.
- Gently stir in 1 ½ pounds ground beef and ½ pound ground pork until just combined. Do not overmix.
- Shape the meatloaf mixture into a loaf and place it in a greased 9x5 inch loaf pan.
- Bake for 1 hour and 5 minutes.
- While the meatloaf bakes, prepare the apple glaze.
- In a small saucepan, combine 1 cup unsweetened applesauce, 2 tablespoons apple liqueur (optional), 2 tablespoons Dijon mustard, and ¼ cup packed light brown sugar.
- Heat over medium heat, stirring frequently, until well blended and slightly thickened (about 5 minutes).
- After the meatloaf has baked for 30 minutes, spoon half of the apple glaze over the top.
- Baste with the remaining glaze every 20 minutes until the internal temperature reaches 160°F (71°C) (approximately another 35 minutes).
- Remove from oven and let the meatloaf rest for 15 minutes before slicing and serving.
