How to Make Apple Streusel Cheddar Muffins
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
- In a large bowl, cream together 1/2 cup (113g) softened butter, 3/4 cup (150g) granulated sugar, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/2 teaspoon salt, and 2 teaspoons baking powder until light and fluffy.
- Beat in 2 large eggs one at a time, mixing well after each addition.
- Gently fold in 2 cups (250g) peeled and diced apples, 1 cup (100g) shredded cheddar cheese, 1/2 cup (60g) chopped walnuts, and 2 cups (240g) all-purpose flour until just combined. Do not overmix.
- In a separate small bowl, combine 1/4 cup (50g) all-purpose flour, 1/4 cup (50g) brown sugar, 1/4 cup (50g) rolled oats, 1/4 cup (50g) chopped walnuts, 1/4 cup (60g) cold, cubed butter, and 1/4 teaspoon ground cinnamon. Use a pastry blender or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Fill each muffin cup about halfway with the batter.
- Sprinkle about 1 tablespoon of the streusel mixture over each muffin.
- Fill the cups to the top with the remaining batter.
- Sprinkle the remaining streusel evenly over the tops of the muffins. (It will spill over – that’s okay!)
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the muffins are golden brown.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
