How to Make Apple Streusel Cheddar Muffins

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
  2. In a large bowl, cream together 1/2 cup (113g) softened butter, 3/4 cup (150g) granulated sugar, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/2 teaspoon salt, and 2 teaspoons baking powder until light and fluffy.
  3. Beat in 2 large eggs one at a time, mixing well after each addition.
  4. Gently fold in 2 cups (250g) peeled and diced apples, 1 cup (100g) shredded cheddar cheese, 1/2 cup (60g) chopped walnuts, and 2 cups (240g) all-purpose flour until just combined. Do not overmix.
  5. In a separate small bowl, combine 1/4 cup (50g) all-purpose flour, 1/4 cup (50g) brown sugar, 1/4 cup (50g) rolled oats, 1/4 cup (50g) chopped walnuts, 1/4 cup (60g) cold, cubed butter, and 1/4 teaspoon ground cinnamon. Use a pastry blender or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  6. Fill each muffin cup about halfway with the batter.
  7. Sprinkle about 1 tablespoon of the streusel mixture over each muffin.
  8. Fill the cups to the top with the remaining batter.
  9. Sprinkle the remaining streusel evenly over the tops of the muffins. (It will spill over – that’s okay!)
  10. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the muffins are golden brown.
