How to Make Arroz Con Pollo A La Tica
- Cook 1 cup chopped carrots and 1 cup chopped green beans in salted boiling water until tender-crisp (about 5-7 minutes). Drain and set aside.
- In a large wok or skillet, sauté 1 medium onion, chopped, and 1 red bell pepper, chopped, in 2 tablespoons olive oil until softened (about 5 minutes).
- Remove onion and pepper mixture; set aside in a small bowl.
- Add remaining 3 tablespoons olive oil to the wok. Add 2 cups cooked rice and stir-fry for 2-3 minutes until heated through.
