How to Make Asian Chicken With Mushrooms
- Heat 1 tablespoon of peanut oil in a wok or large skillet over medium-high heat. Add 1 pound of boneless, skinless chicken breasts (cut into bite-sized pieces) and cook until browned on all sides, about 5-7 minutes. Remove chicken from pan and set aside.
- Add 1 teaspoon of sesame oil to the pan. Add 1/2 cup of thinly sliced shallots, 8 ounces of sliced mushrooms (cremini, shiitake, or a mix), and 2 cloves of minced garlic. Stir-fry for 2-3 minutes, until fragrant and slightly softened.
- Return the chicken to the pan. Add 1/4 cup soy sauce, 2 tablespoons oyster sauce (optional), 1 tablespoon brown sugar, and 1/4 cup water. Stir-fry for 5-7 minutes, or until the mushrooms are tender and the sauce has thickened slightly.
- Serve immediately over hot cooked rice (egg fried rice is recommended!). Garnish with sliced green onions, if desired.
