Ingredients for Atlantic Seafood Chowder

  • Smoked Bacon
  • 2 tablespoons butter
  • Sweet Onion
  • Garlic Cloves
  • Celery Ribs
  • 1 cup carrots, chopped
  • Herbs
  • Russet Potato
  • 1 cup clam juice
  • 1/2 pound cooked lobster meat
  • Halibut Steaks
  • 1/2 pound salmon fillet, cut into 1-inch pieces
  • 1/2 pound shrimp, peeled and deveined
  • 35% Cream

How to Make Atlantic Seafood Chowder

  1. Prepare all ingredients: Chop onion, garlic, celery, and carrots. Roughly chop potatoes. Mince fresh herbs.
  2. Heat a large, heavy-bottomed pot over medium heat. Add 4 slices of bacon, diced, and cook slowly until crisp and golden brown (about 8-10 minutes). Remove bacon with a slotted spoon, reserving bacon fat in the pot.
  3. Add 2 tablespoons of butter to the pot. Add 1 medium onion, chopped, 2 cloves garlic, minced, 2 stalks celery, chopped, and 1 cup carrots, chopped. Season lightly with salt and pepper.
  4. Sauté for about 5 minutes, until softened and slightly caramelized.
  5. Add 2 pounds potatoes, roughly chopped, 1 cup clam juice, 1 tablespoon fresh thyme (or 1 teaspoon dried), and 4 cups water. Bring to a boil, reduce heat, and simmer for 10 minutes, or until potatoes are tender.
  6. Add 1/2 pound cooked lobster meat, 1/2 pound halibut fillet (cut into 1-inch pieces), 1/2 pound salmon fillet (cut into 1-inch pieces), 1/2 pound scallops, 1 pound mussels, 1 pound clams (scrubbed and rinsed), and 1/2 pound shrimp (peeled and deveined).
  7. Cover and cook until clams and mussels have opened (about 5-7 minutes). Discard any that do not open.
  8. Stir in 1 cup heavy cream. Season generously with salt and pepper to taste.
  9. Garnish with 2 tablespoons chopped fresh chives and 2 tablespoons chopped fresh parsley. Serve with warm crusty bread or biscuits.
  10. Enjoy your luxurious Atlantic Seafood Chowder!
