How to Make Atlantic Seafood Chowder

  1. Prepare all ingredients: Chop onion, garlic, celery, and carrots. Roughly chop potatoes. Mince fresh herbs.
  2. Heat a large, heavy-bottomed pot over medium heat. Add 4 slices of bacon, diced, and cook slowly until crisp and golden brown (about 8-10 minutes). Remove bacon with a slotted spoon, reserving bacon fat in the pot.
  3. Add 2 tablespoons of butter to the pot. Add 1 medium onion, chopped, 2 cloves garlic, minced, 2 stalks celery, chopped, and 1 cup carrots, chopped. Season lightly with salt and pepper.
  4. Sauté for about 5 minutes, until softened and slightly caramelized.
