- Smoked Bacon

How to Make Atlantic Seafood Chowder
- Prepare all ingredients: Chop onion, garlic, celery, and carrots. Roughly chop potatoes. Mince fresh herbs.
- Heat a large, heavy-bottomed pot over medium heat. Add 4 slices of bacon, diced, and cook slowly until crisp and golden brown (about 8-10 minutes). Remove bacon with a slotted spoon, reserving bacon fat in the pot.
- Add 2 tablespoons of butter to the pot. Add 1 medium onion, chopped, 2 cloves garlic, minced, 2 stalks celery, chopped, and 1 cup carrots, chopped. Season lightly with salt and pepper.
- Sauté for about 5 minutes, until softened and slightly caramelized.
- Add 2 pounds potatoes, roughly chopped, 1 cup clam juice, 1 tablespoon fresh thyme (or 1 teaspoon dried), and 4 cups water. Bring to a boil, reduce heat, and simmer for 10 minutes, or until potatoes are tender.
- Add 1/2 pound cooked lobster meat, 1/2 pound halibut fillet (cut into 1-inch pieces), 1/2 pound salmon fillet (cut into 1-inch pieces), 1/2 pound scallops, 1 pound mussels, 1 pound clams (scrubbed and rinsed), and 1/2 pound shrimp (peeled and deveined).
- Cover and cook until clams and mussels have opened (about 5-7 minutes). Discard any that do not open.
- Stir in 1 cup heavy cream. Season generously with salt and pepper to taste.
- Garnish with 2 tablespoons chopped fresh chives and 2 tablespoons chopped fresh parsley. Serve with warm crusty bread or biscuits.
