Ingredients for Baked Cod Fish With Anise

  • Anise
  • 1 medium onion, thinly sliced
  • 1 lemon
  • Salt And Pepper
  • Cod
  • 2 tablespoons butter
  • 3 tablespoons olive oil
  • Garlic Powder
  • Basmati Rice
  • 2 cups water

How to Make Baked Cod Fish With Anise

  1. Preheat oven to 350°F (175°C).
  2. Prepare the vegetables: Finely slice 1 medium onion and 2 tablespoons of fresh anise.
  3. In a bowl, gently combine the sliced onion and anise.
  4. In a 9x13 inch baking dish, arrange half of the onion and anise mixture. Season with salt and pepper to taste.
  5. Place 1 pound of cod fillets on top of the vegetables.
  6. Spread the remaining onion and anise mixture over the cod.
  7. Cut 1 lemon in half and squeeze the juice evenly over the fish. Season with additional salt and pepper.
  8. Dot the top with 2 tablespoons of butter, cut into small pieces.
  9. Drizzle 3 tablespoons of olive oil over the fish and vegetables.
  10. Cover the baking dish with foil and bake for 45-60 minutes, or until the cod is cooked through and flakes easily with a fork. There should be enough pan juices to serve over the rice.
  11. While the cod bakes, prepare the rice:
  12. Rinse 1 cup of long-grain white rice under cold water until the water runs clear.
  13. In a deep, microwave-safe dish, combine the rinsed rice with 2 cups of water. Make sure the dish is deep enough as the rice will double in size.
  14. Spread the rice evenly with your fingers.
  15. Microwave on high for 25 minutes.
  16. Remove from the microwave and fluff the rice with a fork. Cover and let stand for 5 minutes.
  17. Serve the baked cod with the pan juices over a generous portion of the fluffy rice. Enjoy!

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
