How to Make Baked Cod Fish With Anise
- Preheat oven to 350°F (175°C).
- Prepare the vegetables: Finely slice 1 medium onion and 2 tablespoons of fresh anise.
- In a bowl, gently combine the sliced onion and anise.
- In a 9x13 inch baking dish, arrange half of the onion and anise mixture. Season with salt and pepper to taste.
- Place 1 pound of cod fillets on top of the vegetables.
- Spread the remaining onion and anise mixture over the cod.
- Cut 1 lemon in half and squeeze the juice evenly over the fish. Season with additional salt and pepper.
- Dot the top with 2 tablespoons of butter, cut into small pieces.
- Drizzle 3 tablespoons of olive oil over the fish and vegetables.
- Cover the baking dish with foil and bake for 45-60 minutes, or until the cod is cooked through and flakes easily with a fork. There should be enough pan juices to serve over the rice.
- While the cod bakes, prepare the rice:
- Rinse 1 cup of long-grain white rice under cold water until the water runs clear.
- In a deep, microwave-safe dish, combine the rinsed rice with 2 cups of water. Make sure the dish is deep enough as the rice will double in size.
- Spread the rice evenly with your fingers.
- Microwave on high for 25 minutes.
- Remove from the microwave and fluff the rice with a fork. Cover and let stand for 5 minutes.
