How to Make Baked Shrimp With Feta
- Preheat oven to 450°F (232°C).
- In a large bowl, combine 1 pound shrimp, 2 tablespoons lemon juice, and 1/4 teaspoon black pepper. Toss gently to coat.
- Heat a large nonstick skillet over medium-high heat. Coat with cooking spray.
- Add 1/2 cup chopped onion to the skillet and sauté for 1 minute.
- Add 2 cloves minced garlic and sauté for 1 minute.
- Pour in 1/2 cup clam juice, 1/4 cup dry white wine, 1 teaspoon dried oregano, and 1 (14.5 ounce) can of diced tomatoes (undrained).
- Bring to a boil, then reduce heat and simmer for 5 minutes.
- Stir in the shrimp mixture from step 2.
- Transfer the mixture to an 11 x 7 inch baking dish coated with cooking spray.
- Sprinkle 4 ounces crumbled feta cheese evenly over the mixture.
- Bake for 12-15 minutes, or until shrimp are pink and opaque and cheese is melted and bubbly.
- Garnish with 2 tablespoons chopped fresh parsley.
