How to Make Asian Miracle Diet Soup

  1. Heat 1 tablespoon of vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add 2 tablespoons minced ginger and 2 cloves minced garlic. Cook until fragrant and softened, about 3-4 minutes.
  3. In a small bowl, whisk together 1/2 cup of broth with 1 tablespoon cornstarch until completely smooth.
  4. Pour the cornstarch mixture into the pot. Add the remaining 4 1/2 cups broth, 14 ounces firm or extra-firm tofu (cubed), 8 ounces sliced mushrooms, 8 ounces bamboo shoots (sliced), 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 tablespoon brown sugar, and 1/2 teaspoon crushed red pepper flakes (or more, to taste).
  5. Bring the soup to a boil, then reduce heat and simmer until the soup has thickened slightly, about 5-7 minutes.
  6. Add 1 cup frozen mixed vegetables (peas, carrots, corn), 8 ounces peeled and deveined shrimp, and 1/4 cup chopped fresh cilantro.
  7. Simmer until the shrimp is pink and opaque, about 5-7 minutes.
  8. Stir in 2 cups baby spinach and cook until just wilted, about 1-2 minutes.
  9. Serve hot. Enjoy this delicious and healthy soup as part of a balanced diet and exercise plan.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
