Ingredients for Beef Stroganoff Crepes

How to Make Beef Stroganoff Crepes
- Preheat oven to 350°F (175°C).
- Prepare crepes ahead of time (recipe not included, but easily found online). Cover and chill.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add 1 cup sliced mushrooms, 1/2 cup chopped onion, and 2 cloves minced garlic. Cook until softened and lightly browned, about 5-7 minutes.
- In a small bowl, whisk together 1/4 cup all-purpose flour and 1/3 cup cold water until smooth.
- In a separate small bowl, dissolve 2 beef bouillon cubes in 1/3 cup boiling water.
- Gradually whisk the bouillon mixture into the flour slurry until smooth.
- Pour the flour mixture into the skillet with the vegetables. Stir in 1/4 cup ketchup, 1 tablespoon Worcestershire sauce, 1 tablespoon prepared mustard, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Cook, stirring constantly, until the sauce has thickened, about 2-3 minutes.
- Add 1 1/2 cups cooked and shredded beef to the skillet. Stir to combine.
- Reduce heat to low, cover, and simmer for 10-15 minutes, or until heated through.
- Remove from heat and stir in 1/2 cup sour cream. Stir gently to avoid curdling.
- Spoon approximately 1/2 cup of the hot beef stroganoff filling onto the center of each crepe.
- Fold the sides of each crepe inward, then roll up tightly.
- Arrange the filled crepes in a greased baking dish.
- Sprinkle each crepe with about 2 tablespoons of grated cheddar cheese.
- Bake for 10-15 minutes, or until the cheese is melted and bubbly and the crepes are heated through.
