How to Make Bitsy's Vegetarian Lasagna

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package directions. Set aside.
  3. While noodles cook, heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  4. Stir in garlic, crushed tomatoes, tomato sauce, oregano, basil, salt, and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  5. In a medium bowl, combine ricotta cheese, Parmesan cheese, egg, salt, and pepper.
  6. Spread a thin layer of tomato sauce in the bottom of a 9x13 inch baking dish.
  7. Layer 3-4 noodles over the sauce.
  8. Spread half of the ricotta mixture over the noodles.
  9. Top with half of the vegetable mixture and half of the mozzarella cheese.
  10. Repeat layers: noodles, ricotta mixture, vegetables, mozzarella cheese.
  11. Pour remaining tomato sauce over the top layer.
  12. Sprinkle remaining mozzarella cheese over the sauce.
  13. Cover the baking dish with foil and bake for 30 minutes.
  14. Remove foil and bake for another 30 minutes, or until cheese is melted and bubbly and the lasagna is heated through.
  15. Let stand for 10-15 minutes before serving.
