How to Make Chow Fun
- Thinly slice your chosen protein (beef, chicken, shrimp, tofu, or duck).
- In a bowl, whisk together 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp cornstarch, and 1 tsp sesame oil. Add the protein and marinate for 15 minutes.
- In a separate bowl, whisk together 1/4 cup soy sauce, 2 tbsp oyster sauce, 1 tbsp brown sugar, 1 tbsp rice vinegar, 1 tsp cornstarch, and 1/2 cup water. Set aside.
- Heat 2 tbsp peanut oil in a wok or large frying pan over medium-high heat.
- Add the rice noodles and toss until hot and slightly browned at the edges. Remove and set aside.
- Add 3 tbsp peanut oil to the wok. Add the minced garlic and ginger and stir-fry for 30 seconds.
- Add the rinsed black beans and Shaoxing rice wine. Stir-fry for 1 minute.
- Add the sliced onion and green pepper and stir-fry until heated through (about 1 minute).
- Remove the vegetables and set aside with the noodles.
- Add the remaining peanut oil to the wok. Add the marinated protein and stir-fry until browned.
- Return the vegetables and noodles to the wok. Toss to combine.
- Pour the prepared sauce over the mixture and toss until heated through and the sauce thickens.
- Add the bean sprouts and stir-fry for 1 minute.
- Serve immediately and enjoy!
