How to Make Chow Fun

  1. Thinly slice your chosen protein (beef, chicken, shrimp, tofu, or duck).
  2. In a bowl, whisk together 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp cornstarch, and 1 tsp sesame oil. Add the protein and marinate for 15 minutes.
  3. In a separate bowl, whisk together 1/4 cup soy sauce, 2 tbsp oyster sauce, 1 tbsp brown sugar, 1 tbsp rice vinegar, 1 tsp cornstarch, and 1/2 cup water. Set aside.
  4. Heat 2 tbsp peanut oil in a wok or large frying pan over medium-high heat.
  5. Add the rice noodles and toss until hot and slightly browned at the edges. Remove and set aside.
  6. Add 3 tbsp peanut oil to the wok. Add the minced garlic and ginger and stir-fry for 30 seconds.
  7. Add the rinsed black beans and Shaoxing rice wine. Stir-fry for 1 minute.
  8. Add the sliced onion and green pepper and stir-fry until heated through (about 1 minute).
  9. Remove the vegetables and set aside with the noodles.
  10. Add the remaining peanut oil to the wok. Add the marinated protein and stir-fry until browned.
  11. Return the vegetables and noodles to the wok. Toss to combine.
  12. Pour the prepared sauce over the mixture and toss until heated through and the sauce thickens.
  13. Add the bean sprouts and stir-fry for 1 minute.
  14. Serve immediately and enjoy!
