How to Make Citrus Fillets
- Preheat oven to 350°F (175°C). Grease a 13x9 inch baking dish.
- Arrange the thinly sliced onion in a single layer on the bottom of the prepared baking dish.
- Place the fish fillets on top of the onions. Season generously with seasoned salt, black pepper, garlic powder, crushed red pepper flakes, and chopped parsley.
- Place the bay leaves around the fish in the baking dish.
- Squeeze the juice from the lemon and orange slices over the fish. Then, arrange the lemon and orange slices around the fish.
- Dot the fish with pats of butter.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- While the fish is baking, combine the apricot and pineapple preserves with 2 tablespoons of water in a small saucepan. Heat gently over low heat until warmed through and slightly melted, stirring occasionally.
- After 20 minutes, remove the baking dish from the oven and carefully remove the aluminum foil.
- Drain most of the liquid from the baking dish, reserving about 2 tablespoons if desired.
- Spoon the warmed apricot and pineapple preserves evenly over the fish.
- Sprinkle the chopped pecans over the preserves.
- Bake, uncovered, for an additional 10 minutes, or until the fish is cooked through and flakes easily with a fork and the pecans are lightly toasted.
