How to Make Citrus Fillets

  1. Preheat oven to 350°F (175°C). Grease a 13x9 inch baking dish.
  2. Arrange the thinly sliced onion in a single layer on the bottom of the prepared baking dish.
  3. Place the fish fillets on top of the onions. Season generously with seasoned salt, black pepper, garlic powder, crushed red pepper flakes, and chopped parsley.
  4. Place the bay leaves around the fish in the baking dish.
  5. Squeeze the juice from the lemon and orange slices over the fish. Then, arrange the lemon and orange slices around the fish.
  6. Dot the fish with pats of butter.
  7. Cover the baking dish with aluminum foil and bake for 20 minutes.
  8. While the fish is baking, combine the apricot and pineapple preserves with 2 tablespoons of water in a small saucepan. Heat gently over low heat until warmed through and slightly melted, stirring occasionally.
  9. After 20 minutes, remove the baking dish from the oven and carefully remove the aluminum foil.
  10. Drain most of the liquid from the baking dish, reserving about 2 tablespoons if desired.
  11. Spoon the warmed apricot and pineapple preserves evenly over the fish.
  12. Sprinkle the chopped pecans over the preserves.
  13. Bake, uncovered, for an additional 10 minutes, or until the fish is cooked through and flakes easily with a fork and the pecans are lightly toasted.
