How to Make One Pot Wonder

  1. Bring 2 cups of water and 1 cup of vegetable or chicken stock to a boil in a large pot.
  2. Add 1 cup of orzo pasta and cook according to package directions, until tender, about 10-12 minutes.
  3. While the orzo cooks, combine 1/2 cup pitted Kalamata olives, 2 tablespoons drained capers, 2 cloves garlic, 1/4 cup olive oil, 1 tablespoon red wine vinegar, and 1 tablespoon chopped fresh oregano (optional) in a blender or food processor. Process until a coarse paste forms.
  4. Once the orzo is cooked, drain it, reserving about 1/4 cup of the cooking liquid. Return the orzo to the pot.
  5. Stir in the olive-caper-garlic paste (or tapenade if using) to coat the orzo. Add a little reserved cooking liquid if needed to loosen the mixture.
  6. Add 5 ounces drained canned tuna, 1/2 cup chopped sun-dried tomatoes, 1/4 cup grated Parmesan cheese, 1/2 teaspoon garlic powder, and freshly ground black pepper to taste.
  7. Stir well to combine. Serve immediately and enjoy!
