How to Make Rogan Josh 2

  1. Melt 2 tbsp ghee in a large pot or Dutch oven over medium heat. Add 1.5 lbs lamb, cut into 1-inch cubes, and brown on all sides. Remove lamb from pot and set aside.
  2. Reduce heat to low. Add 1 tsp cumin seeds, 1 tsp coriander seeds, 1/2 tsp turmeric powder, 1/2 - 1 tsp chili powder (adjust to taste), 1 inch ginger (grated), and 2 cloves garlic (minced). Sauté for 1 minute until fragrant.
  3. Increase heat to medium. Return lamb to the pot along with any accumulated juices. Stir-fry for 3 minutes.
  4. Add 1 large onion, finely chopped, and sauté for 5 minutes until softened.
  5. Stir in 1 (28 ounce) can crushed tomatoes and 2 tbsp tomato puree. Cook for 2 minutes.
  6. Add 1 tsp salt (or to taste), and 1.5 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for approximately 1 hour, or until lamb is very tender.
  7. Stir in 1/2 cup heavy cream. Remove from heat.
  8. In a small pan, melt 1 tbsp ghee. Add 1 tsp garam masala and sauté briefly. Stir in 1 tbsp of the lamb sauce, combine, and then add back to the main pot.
  9. Garnish with fresh coriander leaves.
  10. Serve hot with cumin rice, a vegetable dish, chutney, and pappadums.
