How to Make South Beach Stuffed Bell Peppers

  1. Preheat oven to 350°F (175°C).
  2. Wash bell peppers, cut them in half lengthwise, remove seeds and membranes, and place them cut-side up in a lightly oiled baking dish.
  3. In a large skillet, heat olive oil over medium heat. Add onion and green bell pepper; sauté for 5 minutes until softened.
  4. Add ground turkey and mushrooms to the skillet; cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  5. Stir in the canned diced tomatoes (undrained), oregano, basil, garlic powder, salt, and pepper.
  6. Simmer for 3-4 minutes, or until some of the liquid has evaporated.
  7. Optional: Stir in cooked brown rice.
  8. Fill each bell pepper half with the turkey mixture.
  9. Top each pepper with shredded mozzarella cheese.
  10. Bake for 10-15 minutes, or until peppers are tender and cheese is melted and bubbly.
