How to Make Spiced Skewered Chicken Chicken Sosaties
- In a large, non-reactive bowl, combine the chicken pieces with the marinade (see below).
- Cover the bowl with plastic wrap and refrigerate for at least 24 hours, or preferably longer for maximum flavor.
- While the chicken marinates, prepare the marinade: In a non-reactive saucepan, heat 2 tablespoons of oil over medium heat. Add 1 large chopped onion and cook until lightly browned, about 5 minutes.
- Stir in 2 tablespoons of brown sugar, 1 tablespoon of ground coriander, 1 teaspoon of ground cumin, 1 teaspoon of turmeric, 1/2 teaspoon of cayenne pepper (or to taste), 1/4 teaspoon of ground cloves, 1/4 cup of apple cider vinegar, 2 tablespoons of soy sauce, and 1/4 cup of water.
- Bring to a simmer, stirring constantly, until the sugar dissolves and the sauce slightly thickens, about 2 minutes.
- Remove the chicken from the refrigerator. Thread the chicken pieces onto skewers.
- Preheat your grill or broiler. Grill or broil the sosaties for 10-12 minutes, turning halfway through, until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Serve immediately with apricot chutney.
