Ingredients for Spiced Skewered Chicken Chicken Sosaties

  • Boneless Skinless Chicken Breasts
  • Vegetable Oil
  • 1 large onion, chopped
  • Madras Curry Powder
  • Garlic Cloves
  • Coriander Seed
  • Light Brown Sugar
  • Fresh Lemon Juice

How to Make Spiced Skewered Chicken Chicken Sosaties

  1. In a large, non-reactive bowl, combine the chicken pieces with the marinade (see below).
  2. Cover the bowl with plastic wrap and refrigerate for at least 24 hours, or preferably longer for maximum flavor.
  3. While the chicken marinates, prepare the marinade: In a non-reactive saucepan, heat 2 tablespoons of oil over medium heat. Add 1 large chopped onion and cook until lightly browned, about 5 minutes.
  4. Stir in 2 tablespoons of brown sugar, 1 tablespoon of ground coriander, 1 teaspoon of ground cumin, 1 teaspoon of turmeric, 1/2 teaspoon of cayenne pepper (or to taste), 1/4 teaspoon of ground cloves, 1/4 cup of apple cider vinegar, 2 tablespoons of soy sauce, and 1/4 cup of water.
  5. Bring to a simmer, stirring constantly, until the sugar dissolves and the sauce slightly thickens, about 2 minutes.
  6. Remove the chicken from the refrigerator. Thread the chicken pieces onto skewers.
  7. Preheat your grill or broiler. Grill or broil the sosaties for 10-12 minutes, turning halfway through, until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Serve immediately with apricot chutney.

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
