How to Make Swiss Oven Omelet
- Preheat oven to 375°F (190°C).
- In a 10-inch ovenproof skillet, heat olive oil over medium heat. Add sliced red onion and sugar. Cook and stir for 10-12 minutes, or until onions are golden brown and caramelized.
- Remove 1/4 cup of the caramelized onion mixture and set aside.
- Add chopped green onions, Dijon mustard, and dried thyme to the skillet with the remaining caramelized onions. Stir well to combine.
- Remove skillet from heat.
- In a medium bowl, whisk together eggs, water, salt, and pepper until light and frothy.
- Pour the egg mixture into the skillet over the onion mixture.
- Sprinkle 1/4 cup of the grated Gruyere cheese evenly over the top.
- Bake uncovered in the preheated oven for 10-15 minutes, or until the omelet is set and a knife inserted near the center comes out clean.
- Remove from oven and top with the reserved 1/4 cup of caramelized onion mixture and the remaining Gruyere cheese.
- Let stand for a few minutes before cutting into wedges and serving. Enjoy!
