- 1 pound lasagna noodles
- 1 pound ground beef

How to Make 3 Cheese Lasagna
- Preheat oven to 350°F (175°C).
- Mince 2 cloves of garlic.
- In a mortar and pestle, coarsely grind 1 teaspoon black peppercorns, 1 teaspoon salt, 1 teaspoon dried thyme, 1 teaspoon dried basil, and 1 teaspoon dried oregano.
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the minced garlic and ground spice mixture; sauté for 30 seconds until fragrant.
- Add 1 pound ground beef to the skillet; cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- While the beef cooks, bring a large pot of salted water to a boil. Add 1 pound lasagna noodles and cook according to package directions until al dente. Drain and set aside.
- Chop 8 ounces cremini mushrooms and 1 medium onion.
- Add the chopped mushrooms and onion to the skillet with the ground beef. Cook until softened, about 5-7 minutes.
- Stir in 28 ounces (2 jars) of your favorite spaghetti sauce, 1 (28-ounce) can crushed tomatoes, and 2 tablespoons tomato paste. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.
- Grate 8 ounces mozzarella cheese, crumble 15 ounces ricotta cheese, and grate 4 ounces gouda cheese and 2 ounces feta cheese.
- In a large bowl, gently combine the ricotta, gouda, and feta cheese.
- In a 9x13 inch baking dish, spread a thin layer of meat sauce. Layer with 3 lasagna noodles, half of the cheese mixture, and another layer of meat sauce.
- Repeat layers: noodles, remaining cheese mixture, and remaining meat sauce.
- Top with remaining noodles and sprinkle with extra parmesan cheese (about 1/4 cup).
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until bubbly and golden brown.
