How to Make Adobo Chicken Pie

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, whisk together 1/4 cup yellow mustard, 1 cup all-purpose flour, 1 cup cornmeal, 1/4 cup sugar, 2 tsp baking powder, and 1 tsp salt.
  3. Add 1 cup milk, 1/4 cup vegetable oil, and 1 large egg. Mix until just combined; do not overmix.
  4. Finely chop 2 adobo peppers and stir them into the batter.
  5. Pour half of the cornbread batter into an 8x8 inch greased baking dish and spread evenly.
  6. Spread 1 (15-ounce) can of mashed black beans over the cornbread layer.
  7. In a medium bowl, combine 1 cup sour cream, 1/2 cup cooked corn kernels, 1 finely chopped adobo pepper, 1 cup shredded cheddar cheese, and 1/4 cup chopped green chiles.
  8. Spread the sour cream mixture evenly over the black beans.
  9. Top with 2 cups shredded cooked chicken.
  10. Pour the remaining cornbread batter over the chicken.
  11. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
