How to Make All Day Soup
- Season the beef cubes generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Brown the beef cubes in batches, ensuring not to overcrowd the pan. Set aside.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Transfer the browned beef and sauteed onions to a 5-quart slow cooker.
- Add beef broth, diced tomatoes (undrained), carrots, celery, thyme, rosemary, and bay leaf to the slow cooker.
- Stir well to combine all ingredients.
- Cover and cook on low for 8-10 hours, or until the beef is incredibly tender and easily shreds with a fork.
- Remove the bay leaf before serving. Taste and adjust seasoning with salt and pepper as needed.
- Serve hot and enjoy!
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
