How to Make Aphrodite Salad
- Wash and thoroughly dry all lettuce varieties.
- In a large bowl, combine 5 oz mixed baby lettuce, 2 cups chopped cucumber, 1 cup cherry tomatoes (halved), and ½ cup crumbled feta cheese.
- Add ¼ cup Kalamata olives (halved or quartered).
- In a small bowl, whisk together 2 tbsp olive oil, 1 tbsp red wine vinegar, 1 tsp Dijon mustard, ½ tsp dried oregano, salt and pepper to taste.
- Pour dressing over the salad and gently toss to combine.
- Serve immediately or chill for later. Garnish with fresh oregano sprigs before serving (optional).
