How to Make Apple And Mint Couscous

  1. Heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add 1/2 cup chopped onion and 1/2 cup chopped celery. Cook until softened, about 5 minutes.
  2. Pour in 1 1/2 cups vegetable broth and bring to a boil.
  3. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  4. Remove from heat and stir in 1 cup couscous. Cover and let stand for 5 minutes.
  5. Fluff the couscous with a fork.
  6. While the couscous is standing, prepare the apple and mint: dice 1 medium Paula Red apple (or similar variety) and finely chop 2 tablespoons fresh mint leaves.
  7. Gently stir in the diced apple, chopped mint, and 2 tablespoons of butter into the couscous.
  8. Taste and adjust seasoning as needed. Serve warm or at room temperature.
