How to Make Apple Syrup Cake
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch pyrex baking dish.
- Cream together 1 cup (2 sticks) softened butter and 1 ¾ cups granulated sugar until light and fluffy.
- Beat in 4 large eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together 2 ½ cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon baking soda, and ½ teaspoon ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, alternating with 1 cup milk, beginning and ending with the dry ingredients. Mix until just combined.
- Stir in 1 teaspoon vanilla extract.
- Gently fold in 4 cups peeled and diced apples.
- Pour batter into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Check for doneness at 25 minutes.
- While the cake is baking, prepare the syrup: In a small saucepan, combine ½ cup granulated sugar, ¼ cup water, ¼ cup apple cider, and 2 tablespoons lemon juice. Bring to a boil over medium heat, then reduce heat and simmer for 5 minutes, or until slightly thickened.
- As soon as the cake comes out of the oven, immediately pour the warm syrup evenly over the top.
