How to Make Asian Inspired Pork And Broccoli Stir Fry

  1. Thinly slice 1 lb pork loin. Place in a large bowl, cover with 1 cup water and 2 tbsp white vinegar.
  2. Let sit for 2 minutes.
  3. Rinse pork thoroughly and pat completely dry with paper towels.
  4. In a large bowl, combine the pork with: 2 tbsp soy sauce, 1 tbsp rice vinegar, 3 cloves minced garlic, 1 tsp grated ginger, 1 tbsp sesame oil, and 1 tbsp brown sugar.
  5. Toss to coat the pork evenly.
  6. Marinate for at least 30 minutes, or up to 24 hours in the refrigerator. Bring to room temperature before cooking.
  7. Once marinated, remove pork from marinade, pat dry with paper towels. Reserve the marinade.
  8. In the same bowl, whisk together the reserved marinade with: 2 tbsp soy sauce, 1 cup chicken broth, and 1 tbsp cornstarch.
  9. Set aside.
  10. Heat a wok or large deep skillet over high heat until very hot. Add 2 tbsp canola oil.
  11. Once oil is shimmering, add the pork. Stir-fry until no longer pink, about 2 minutes.
  12. Transfer the cooked pork to a plate and cover with foil to keep warm.
  13. Add 1 medium onion, sliced, to the wok. Stir-fry for 1 minute.
  14. Add 3 cloves minced garlic, 1/2 tsp crushed red pepper flakes (or to taste), and 1 tsp grated ginger.
  15. Stir-fry for 30 seconds.
  16. Add 1 large head broccoli, cut into florets, 2 medium carrots, peeled and sliced, and 1/2 cup chicken broth.
  17. Bring to a boil, then reduce heat to medium, cover, and cook for 3-5 minutes, or until vegetables are tender-crisp.
  18. Return the pork to the wok. Pour in the soy sauce mixture and stir to combine.
  19. Cook for 1-2 minutes, or until the sauce has thickened.
  20. Serve immediately over cooked brown rice or your favorite rice. Enjoy!
