Ingredients for Barbecued Lima Beans

  • 1 pound dried lima beans
  • Bacon
  • Tomato Soup
  • Onion
  • Green Bell Pepper
  • 1/2 cup brown sugar (adjust to taste)
  • Ketchup
  • Dry Mustard
  • Worcestershire Sauce

How to Make Barbecued Lima Beans

  1. In a large bowl, combine 1 pound dried lima beans with 8 cups of water. Soak for at least 8 hours, or preferably overnight.
  2. Preheat oven to 300°F (150°C).
  3. Drain and rinse the soaked lima beans.
  4. In a large oven-safe pot or Dutch oven, combine the drained lima beans with 1 large onion, chopped; 2 cloves garlic, minced; 1 cup ketchup; 1/2 cup brown sugar; 1/4 cup apple cider vinegar; 2 tablespoons Worcestershire sauce; 1 tablespoon Dijon mustard; 1 teaspoon smoked paprika; 1/2 teaspoon black pepper; and 1/2 cup beef broth.
  5. Stir well to ensure all beans are coated with the sauce.
  6. Cover the pot and bake for 6 hours, stirring occasionally. After 6 hours, remove the lid and continue baking for another hour to allow the sauce to thicken slightly.
  7. Taste and adjust seasonings as needed, adding more brown sugar for sweetness, or more vinegar for tanginess. You can also add a pinch of salt if required.
  8. Serve hot and enjoy! These beans are delicious as a side dish, or served alongside grilled meats.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
