- 1 pound dried lima beans

How to Make Barbecued Lima Beans
- In a large bowl, combine 1 pound dried lima beans with 8 cups of water. Soak for at least 8 hours, or preferably overnight.
- Preheat oven to 300°F (150°C).
- Drain and rinse the soaked lima beans.
- In a large oven-safe pot or Dutch oven, combine the drained lima beans with 1 large onion, chopped; 2 cloves garlic, minced; 1 cup ketchup; 1/2 cup brown sugar; 1/4 cup apple cider vinegar; 2 tablespoons Worcestershire sauce; 1 tablespoon Dijon mustard; 1 teaspoon smoked paprika; 1/2 teaspoon black pepper; and 1/2 cup beef broth.
- Stir well to ensure all beans are coated with the sauce.
- Cover the pot and bake for 6 hours, stirring occasionally. After 6 hours, remove the lid and continue baking for another hour to allow the sauce to thicken slightly.
- Taste and adjust seasonings as needed, adding more brown sugar for sweetness, or more vinegar for tanginess. You can also add a pinch of salt if required.
- Serve hot and enjoy! These beans are delicious as a side dish, or served alongside grilled meats.
