How to Make Bayou Chicken

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Brown chicken pieces on all sides.
  3. Add chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Stir in garlic, Cajun seasoning, salt, and pepper. Cook for 1 minute more.
  5. Add diced eggplant and zucchini to the skillet. Cook for 5 minutes, stirring occasionally.
  6. Pour in chicken broth and bring to a simmer.
  7. Cover the skillet and transfer to the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  8. While the chicken is baking, cook rice according to package directions.
  9. Once the chicken is cooked, remove from oven and stir in chopped green onions.
  10. Serve the Bayou Chicken over a bed of fluffy rice. Garnish with fresh parsley (optional).
