Ingredients for Beef And Bean Medley

  • Lean Ground Beef
  • 1 medium onion, chopped
  • 4 slices bacon, cooked and crumbled
  • Pork And Beans
  • Butter Beans
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1/2 cup ketchup
  • 1/4 cup packed brown sugar
  • 2 tablespoons white vinegar
  • 1 cup crushed corn chips
  • Cheddar Cheese
  • 1 teaspoon black pepper
  • Oregano

How to Make Beef And Bean Medley

  1. Brown 1 lb ground beef and 1 medium onion (chopped) in a large skillet over medium-high heat. Drain off any excess grease and transfer to a 4-5 quart slow cooker.
  2. Add 4 slices bacon (cooked and crumbled), 1 (15-ounce) can kidney beans (drained and rinsed), 1 (15-ounce) can pinto beans (drained and rinsed), and 1 (15-ounce) can black beans (drained and rinsed) to the slow cooker.
  3. In a medium bowl, whisk together 1/2 cup ketchup, 1/4 cup packed brown sugar, 2 tablespoons white vinegar, 1 teaspoon black pepper, and 1 teaspoon dried oregano.
  4. Pour the sauce mixture into the slow cooker. Stir to combine all ingredients.
  5. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until heated through and flavors have melded.
  6. Before serving, spoon a generous amount of the Beef and Three-Bean Medley over crushed corn chips (about 1 cup) and sprinkle with your favorite shredded cheese (about 1/2 cup).

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
