How to Make Beef Minestrone
- In a large Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add 1 lb beef stew meat, cut into 1-inch cubes, and 1 medium onion, chopped. Cook until the beef is browned and the onion is softened, about 8-10 minutes.
- Drain off any excess fat.
- Add 6 cups of water or beef broth, 2 medium potatoes (peeled and diced), 1 (28 ounce) can crushed tomatoes, 2 cups shredded green cabbage, 1 cup chopped carrots, 1 cup chopped celery, 1/2 cup uncooked long-grain rice, 1 teaspoon dried thyme, and 1 bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, or until the vegetables are tender.
- Remove the bay leaf.
- Before serving, taste and adjust seasonings as needed. Ladle into bowls and sprinkle each serving with 1/2 teaspoon of grated Parmesan cheese.
