How to Make Combination Chow Mein

  1. In a bowl, combine diced pork, five-spice powder, hoisin sauce, and soy sauce. Mix well, cover, and marinate for at least 2 hours in the refrigerator (or longer for deeper flavor).
  2. Heat 1 tablespoon of peanut oil in a wok or large skillet over medium-high heat. Add prawns and stir-fry for 2-3 minutes, until they turn pink and opaque. Remove prawns from wok and set aside, keeping warm.
  3. Add the remaining 1 tablespoon of peanut oil to the wok. Add diced chicken and marinated pork. Stir-fry until cooked through, about 5-7 minutes.
  4. Remove chicken and pork from wok and keep warm with the prawns.
  5. Add diced carrots and brown onion to the wok and stir-fry until softened, about 3-4 minutes.
  6. Add celery, capsicum, and mushrooms. Stir-fry for another 3-4 minutes, until vegetables are tender-crisp.
  7. In a small bowl, whisk together chicken stock, cornflour, light soy sauce, and oyster sauce until smooth.
  8. Return the prawn, chicken, and pork mixture to the wok. Add bok choy, bean sprouts, and green onions.
  9. Pour the sauce mixture over the ingredients in the wok. Stir-fry until the sauce boils and thickens, about 1-2 minutes.
  10. Serve hot over cooked rice. Garnish with extra green onions and chow mein noodles (optional).
