How to Make Hokkien Noodle With Seared Prawns

  1. Boil a pot of water. Once boiling, add 200g dried Hokkien noodles. Cover and let stand for 2 minutes. Drain well and set aside.
  2. Heat 2 tablespoons of oil in a wok or large pan over high heat.
  3. Add 2 finely chopped shallots, 2 minced cloves garlic, and 1 tablespoon minced ginger. Stir-fry for 2 minutes until fragrant.
  4. Crack in 2 eggs and scramble until cooked through but still slightly moist. Push to the side of the wok.
  5. Add 150g Chinese broccoli or bok choy, cut into bite-sized pieces. Stir-fry for 1 minute.
  6. Add 150g sliced pork, 2 tablespoons oyster sauce, and 1 tablespoon sweet chili sauce. Stir-fry for 2 minutes, ensuring the egg coats the ingredients.
  7. Add the drained noodles and stir-fry for another 3 minutes.
  8. Add 100g bean sprouts.
  9. Pour in 100ml chicken stock, stir well, and cover the wok.
  10. Let simmer for 5 minutes.
  11. While the noodles simmer, heat 1 tablespoon of oil in a separate pan over high heat.
  12. Add 200g prawns and sear for 5 minutes, or until pink and cooked through.
  13. Divide the noodles among 4 bowls.
  14. Top each serving with the seared prawns and serve immediately with lime wedges for squeezing.
