How to Make Malabar Egg Coconut Curry

  1. Blend 2 tbsp coriander powder, 1 tbsp turmeric powder, 1 tsp chilli powder, 1/2 tsp cumin powder, 1/4 tsp mustard seeds, 1/2 inch ginger (grated), 2 cloves garlic (minced), and 1/4 cup water into a smooth paste.
  2. Heat 2 tbsp oil and 1 tbsp ghee in a wok or large pan over medium heat. Add 1 tsp mustard seeds and fry until they splutter.
  3. Add 1 medium onion (thinly sliced), 2 cloves garlic (minced), 2-3 slit green chilies, and a sprig of curry leaves.
  4. Sauté until the onions are soft and translucent (about 5 minutes).
  5. Now add the blended paste and fry over low heat for 5-7 minutes, or until the oil starts to separate from the mixture.
  6. Add 1/2 cup thin coconut milk and 2 medium potatoes (peeled and cubed).
  7. Bring to a simmer, cover, and cook until the potatoes are tender (about 10-12 minutes).
  8. Add 4 hard-boiled eggs (halved or quartered) and 1/2 cup thick coconut milk.
  9. Bring to a gentle boil, stirring frequently, to combine all ingredients. Simmer for another 2 minutes.
  10. Remove from heat and garnish with fresh cilantro (optional).
  11. Serve hot with your favorite bread or rice.
