- In a food processor, combine 1/2 cup peanut butter, 1/4 cup soy sauce, 2 tablespoons brown sugar, 1 tablespoon fish sauce, 2 cloves garlic (minced), 1 tablespoon lime juice, 1 teaspoon grated ginger, 1/2 teaspoon ground coriander, 1/4 teaspoon red pepper flakes, and 1/4 cup water. Blend until completely smooth.
- Add 1.5 lbs boneless, skinless chicken breasts to the marinade. Cover and refrigerate for at least 2 hours, or preferably overnight.
