How to Make Achari Chicken

  1. Heat 3 tablespoons of vegetable oil in a wok or large pan over medium heat. Add the chopped onion and sauté gently until softened and translucent (about 5 minutes).
  2. Reduce heat to low. Add the minced garlic and ginger and sauté for another minute, stirring continuously, until fragrant.
  3. Add the turmeric powder, chilli powder, ground cumin, ground coriander, and black pepper. Cook for 1-2 minutes, stirring constantly, until fragrant and the spices are lightly toasted.

  5. Add the chicken pieces and cook, stirring occasionally, until browned and almost cooked through (about 8-10 minutes).

  7. Add the chopped green chilies, mango powder, salt, mustard oil, and fenugreek seeds. Stir well to combine and cook for another minute.
