How to Make Achari Chicken
- Heat 3 tablespoons of vegetable oil in a wok or large pan over medium heat. Add the chopped onion and sauté gently until softened and translucent (about 5 minutes).
- Reduce heat to low. Add the minced garlic and ginger and sauté for another minute, stirring continuously, until fragrant.
- Add the turmeric powder, chilli powder, ground cumin, ground coriander, and black pepper. Cook for 1-2 minutes, stirring constantly, until fragrant and the spices are lightly toasted.
- Add the chopped tomato and cook for 2-3 minutes until slightly softened.
- Add the chicken pieces and cook, stirring occasionally, until browned and almost cooked through (about 8-10 minutes).
- Stir in the yogurt and cook for another 2-3 minutes until the yogurt is heated through.
- Add the chopped green chilies, mango powder, salt, mustard oil, and fenugreek seeds. Stir well to combine and cook for another minute.
- Serve hot with steamed rice and your favorite Indian bread. Garnish with fresh cilantro (optional).
