Ingredients for Apple Granola Bread

  • All Purpose Flour
  • Whole Wheat Flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • Low Fat Granola
  • 1 cup buttermilk
  • 1/2 cup packed brown sugar
  • 1/4 cup honey
  • Frozen Orange Juice Concentrate
  • 2 large egg whites
  • Vegetable Oil
  • Apple
  • 1 tablespoon granulated sugar

How to Make Apple Granola Bread

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5x3-inch loaf pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, combine the granola cereal, buttermilk, brown sugar, honey, and orange juice concentrate. Let stand for 5 minutes to soften the granola.
  4. Add the egg whites and vegetable oil to the wet ingredients. Mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently fold in the chopped apple.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Sprinkle the top of the batter with 1 tablespoon of granulated sugar.
  9. Bake for 50-60 minutes, or until a wooden pick inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  11. Once completely cool, slice and serve. Enjoy!

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
