- Cook 1 lb sausage in a large skillet over medium heat until no longer pink, about 10 minutes, stirring often.
- Drain off most of the fat from the sausage.
- Add 1 medium onion, chopped, and 2 stalks celery, chopped, to the skillet. Cook for another 3 minutes, until softened.
- Stir in 2 medium apples, peeled, cored, and diced; 1 teaspoon dried sage; 1/2 teaspoon dried thyme; and 1/4 teaspoon dried marjoram. Cook for another 5 minutes.
- Pour in 1 cup chicken broth and bring to a boil.
- Remove from heat and stir in 6 cups cubed bread (day-old is best), 1/4 cup chopped fresh parsley, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Spoon the stuffing mixture into a lightly greased 9x13 inch casserole dish.
- Bake, covered, in a preheated 325°F (160°C) oven for 40 minutes.
- Halfway through baking, remove from oven and drizzle the remaining 1/2 cup chicken broth over the stuffing.
- Remove the lid and bake for an additional 10 minutes, or until the stuffing is golden brown and heated through.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
