  • All Purpose Flour
  • 1/2 cup granulated sugar

  • Sharp Cheddar Cheese
  • Cold Water
  • 1 large egg white, lightly beaten
  • 1 tablespoon granulated sugar mixed with 1/2 teaspoon ground cinnamon

How to Make Applicious Cream Cheese Pie

  1. Preheat oven to 450°F (232°C).
  2. In a large bowl, whisk together flour, 1/2 cup granulated sugar, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Add the shortening and cut in until the mixture resembles small peas.
  5. Stir in the cheddar cheese.
  6. Gradually add ice water, 1 tablespoon at a time, mixing lightly with a fork until the dough just comes together.
  7. Form the dough into two equal balls, wrap in plastic wrap, and refrigerate for at least 1 hour.
  8. On a lightly floured surface, roll out half of the dough into a 12-inch circle. Transfer to a 9-inch pie plate.
  9. Trim and crimp the edges, leaving a slight overhang.
  10. In a medium bowl, beat together the softened cream cheese, powdered sugar, egg, and lemon juice until smooth.
  11. Spread the cream cheese mixture evenly over the bottom of the pie crust.
  12. In a large bowl, combine the sliced apples, 1/2 cup granulated sugar, brown sugar, cinnamon, nutmeg, allspice, and 2 tablespoons flour. Toss gently to coat.
  13. Pour the apple mixture into the pie crust over the cream cheese filling.
  14. Dot the top with the 2 tablespoons of butter.
  15. Roll out the remaining dough and place it over the filling. Trim and crimp the edges to seal.
  16. Cut several vents in the top crust to allow steam to escape.
  17. Decorate the top with leftover pastry scraps, if desired.
  18. Brush the top crust with the beaten egg white and sprinkle with cinnamon sugar.
  19. Bake on the bottom oven rack for 10 minutes at 450°F (232°C).
  20. Reduce the oven temperature to 350°F (177°C) and continue baking for 40-50 minutes, or until the crust is golden brown and the filling is bubbly and the apples are tender.
  21. Let cool completely on a wire rack before serving.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
