How to Make Awesome Easy Chicken Pot Pie

  1. Preheat oven to 375°F (190°C).
  2. In a large oven-safe skillet or Dutch oven, melt 2 tablespoons of butter over medium heat. Add 1 diced onion and 2 minced carrots and cook until softened, about 5 minutes.
  3. Add 1 cup of diced cooked chicken, 1 cup of frozen peas and 1/2 cup of frozen corn to the skillet. Stir in 1/2 cup of chicken broth and 1/4 cup of all-purpose flour. Cook until thickened, about 2 minutes.
