How to Make Apricot Chicken Stir Fry
- In a small bowl, soak 1/2 cup dried apricots in 1/2 cup hot water for 10 minutes. Set aside.
- In a shallow dish, combine 1/4 cup all-purpose flour, 1/4 cup chopped fresh cilantro, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add 1 lb boneless, skinless chicken breasts and toss to coat evenly.
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
- Add 1 medium onion, chopped, and 2 stalks celery, chopped, and stir-fry for 2-3 minutes until softened.
- Add 1 cup snow peas, 1 tablespoon grated fresh ginger, 2 cloves garlic (minced), and the soaked apricots (with their soaking liquid). Stir-fry for 2 minutes.
- Add 1 tablespoon vegetable oil to a separate skillet and add the coated chicken. Stir-fry for 6-7 minutes, or until cooked through and no longer pink.
- Sprinkle the cooked chicken with 2 tablespoons lemon juice.
- Add the cooked chicken to the apricot mixture in the first skillet. Stir to combine and heat through for 1 minute.
- Serve the stir-fry over cooked rice. Garnish with extra cilantro, if desired.
