How to Make Apricot Chicken Stir Fry

  1. In a small bowl, soak 1/2 cup dried apricots in 1/2 cup hot water for 10 minutes. Set aside.
  2. In a shallow dish, combine 1/4 cup all-purpose flour, 1/4 cup chopped fresh cilantro, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add 1 lb boneless, skinless chicken breasts and toss to coat evenly.
  3. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
