How to Make Aromatic And Cheese Stuffed Meat Loaf
- Preheat oven to 350°F (175°C).
- Soak 1 ounce dried mushrooms in 1 cup warmed beef broth for 30 minutes. Drain, reserving the broth, and roughly chop the mushrooms.
- Coat the bottom of a large roasting pan (approximately 9x13 inches) with 1 tablespoon olive oil.
- In a large skillet, heat 2 tablespoons olive oil over medium heat. Sauté 1 cup chopped carrots, 1 cup chopped red bell pepper, 1 cup chopped celery, and 1 medium onion (chopped) until softened (about 5-7 minutes).

- In a medium bowl, combine the reserved mushroom broth and 1 cup breadcrumbs. Let soak for 5 minutes.
- In a large bowl, combine 1.5 cups breadcrumbs, 2 tablespoons chopped fresh parsley, 1 tablespoon olive oil, 1 cup shredded cheddar cheese, 1 teaspoon salt, and ½ teaspoon black pepper.
- In a separate large bowl, gently combine 2 pounds ground beef, the soaked breadcrumbs, the cooled sautéed vegetables, 2 large eggs, 1 tablespoon chopped fresh parsley, 1 teaspoon dried thyme, 1 cup cubed Monterey Jack cheese, 1 teaspoon salt, and ½ teaspoon black pepper.
- Place the meat mixture into the prepared roasting pan and shape into a loaf.
- Cover the top and sides of the meatloaf with the cheese-bread crumb mixture.
- Bake for 70-75 minutes, or until an instant-read thermometer inserted into the center registers 165°F (74°C).
- Let rest for 10 minutes before slicing and serving with mashed potatoes.
