- Jalapeno Peppers
- 2 large red bell peppers
- 1 lb ground beef
- 1 (15 ounce) can kidney beans (drained and rinsed)
- Tomato Paste
- Ro Tel Tomatoes
- Water
- Sugar

- 2 tablespoons chili powder
- Paprika
- 1 tablespoon cumin
- Ground Oregano

How to Make Awesome Chili No Onions
- Preheat your broiler.
- Adjust oven rack to 6 inches below the broiler element.
- Wash and dry 2 large red bell peppers and 2-3 jalapeños. Lightly coat with olive oil.
- Place peppers directly on the broiler pan. Broil, turning every 2-3 minutes, until the skins are charred and blistered (about 8-10 minutes total).
- Transfer peppers to a bowl, cover tightly, and let steam for 10 minutes. This will make peeling easier.
- While peppers steam, put on food-safe gloves to protect your hands from jalapeño oils. Remove stems from jalapeños.
- Slice jalapeños lengthwise, remove seeds and membranes, and finely chop.
- Peel and deseed the roasted bell peppers. Roughly chop.
- In a large pot or Dutch oven, brown 1 lb ground beef over medium-high heat, breaking it up with a spoon.
- Drain off any excess grease.
- Add the chopped jalapeños to the pot.
- Add the following ingredients: 1 (28 ounce) can crushed tomatoes, 1 (15 ounce) can tomato sauce, 1 (15 ounce) can kidney beans (drained and rinsed), 1 (15 ounce) can pinto beans (drained and rinsed), 1 cup beef broth, 2 tablespoons chili powder, 1 tablespoon cumin, 1 teaspoon smoked paprika, 1/2 teaspoon oregano, 1/4 teaspoon cayenne pepper (optional), salt and pepper to taste.
- Stir well to combine.
- Add the chopped bell peppers.
- Bring to a simmer, then reduce heat to low, cover, and cook for 20-30 minutes, or until flavors have melded.
- Taste and adjust seasonings as needed. Serve hot and enjoy!
