  • 2 large red bell peppers
  • 1 lb ground beef
  • 1 (15 ounce) can kidney beans (drained and rinsed)

How to Make Awesome Chili No Onions

  1. Preheat your broiler.
  2. Adjust oven rack to 6 inches below the broiler element.
  3. Wash and dry 2 large red bell peppers and 2-3 jalapeños. Lightly coat with olive oil.
  4. Place peppers directly on the broiler pan. Broil, turning every 2-3 minutes, until the skins are charred and blistered (about 8-10 minutes total).
  5. Transfer peppers to a bowl, cover tightly, and let steam for 10 minutes. This will make peeling easier.
  6. While peppers steam, put on food-safe gloves to protect your hands from jalapeño oils. Remove stems from jalapeños.
  7. Slice jalapeños lengthwise, remove seeds and membranes, and finely chop.
  8. Peel and deseed the roasted bell peppers. Roughly chop.

  13. Stir well to combine.
  14. Add the chopped bell peppers.
  15. Bring to a simmer, then reduce heat to low, cover, and cook for 20-30 minutes, or until flavors have melded.
