How to Make Awesome Crock Pot Lasagna

  1. Brown 1 lb ground beef and 1 medium onion (chopped) in a large skillet over medium-high heat. Drain off excess grease.
  2. Add 2 cloves garlic (minced), 8 oz cremini mushrooms (sliced), 1 tsp salt, 1/2 cup dry red wine, 24 oz jar of your favorite spaghetti sauce, 6 oz tomato paste, and 15 oz can of tomato sauce to the skillet. Stir well to combine.
  3. Bring to a simmer, then set aside to cool slightly.
  4. In a medium bowl, whisk together 2 large eggs, 15 oz ricotta cheese, 1/2 cup grated Parmesan cheese, and 1 tbsp dried parsley flakes.
  5. Lightly grease a 5-6 quart slow cooker with cooking spray.
  6. Layer 4 lasagna noodles (broken to fit), half of the ricotta mixture, 1/4 of the meat mixture, and 1/4 cup of shredded mozzarella cheese in the bottom of the slow cooker.
  7. Repeat layers: 4 lasagna noodles, remaining ricotta mixture, 1/4 of the meat mixture, and 1/4 cup shredded mozzarella cheese.
  8. Top with the remaining 4 lasagna noodles and the remaining meat mixture.

  10. About 10 minutes before serving, sprinkle the top with the remaining 1 cup shredded mozzarella cheese. Cover and let stand for 10 minutes to allow the cheese to melt completely.
