How to Make Baked Beans Crock Pot

  1. Rinse 1 (28 ounce) can of kidney beans and 1 (15 ounce) can of pinto beans. Soak in enough cold water to cover by at least 2 inches for at least 12 hours (or overnight).
  2. Drain and rinse the soaked beans. Transfer to a large pot and cover with fresh water. Bring to a boil over medium-high heat, then reduce heat and simmer for 1 hour, or until tender.
  3. While beans simmer, cook 1/2 pound bacon in a large skillet over medium heat until crispy. Remove bacon with a slotted spoon and set aside; crumble when cool. Reserve 2 tablespoons of bacon grease in the skillet.
  4. Add 1 medium yellow onion, chopped, to the skillet with the bacon grease. Cook over medium heat until softened and translucent, about 5 minutes. Set aside.
  5. In a medium saucepan, whisk together 1/2 cup maple syrup, 1/4 cup molasses, 1 teaspoon black pepper, 2 tablespoons Dijon mustard, 1/2 cup ketchup, 1/4 cup tomato paste, 1/4 cup packed light brown sugar, 1/4 teaspoon Tabasco sauce, 1/4 cup fresh orange juice, 1/4 cup pineapple juice, 1/4 cup strong brewed coffee, and 1 cup low-sodium chicken broth.
  6. Bring the sauce to a simmer over medium heat. Cook for 10-15 minutes, stirring occasionally, until slightly thickened.
  7. In your slow cooker, combine the cooked beans, bacon, cooked onions, and the prepared sauce. Stir to combine.
  8. Ensure the beans are generously covered with liquid. Add more chicken broth or a combination of juices if necessary.
  9. Cook on low for 12 hours or on high for 8 hours.
  10. During the last 30 minutes of cooking, taste and adjust seasoning. Add salt to taste if needed.
