- Heat 1 tablespoon of oil in a large skillet or wok over medium heat.
- Add 1/2 cup chopped onion, 1/2 cup chopped celery, and 1/2 cup chopped carrot. Sauté until onions are translucent and carrots are crisp-tender, about 5 minutes.
- Push vegetables to one side of the skillet. In the empty space, scramble 2 large eggs until cooked through.
