How to Make Better Than Paula S Taco Soup

  1. Brown 1 lb ground turkey in 2 tablespoons extra virgin olive oil in a large skillet over medium-high heat. Drain off any excess grease.
  2. Transfer the browned ground turkey to a 6-quart slow cooker.
  3. Add 1 large onion (chopped), 2 (15-ounce) cans of pinto beans (drained and rinsed), 2 (15-ounce) cans of corn (drained), 4 cloves garlic (minced), 2 (28-ounce) cans crushed tomatoes, 1 (4-ounce) can diced green chiles, 1-2 jalapeños (seeded and minced, to taste), 1 cup sliced olives, 2 tablespoons taco seasoning, and 1 packet ranch seasoning mix to the slow cooker.
  4. Stir to combine all ingredients thoroughly.
