- Olive Oil
- Red Onion
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon mustard powder
- Vegetable Broth
- Tomato Sauce
- Balsamic Vinegar
- Dijon Mustard
- 1 tablespoon honey
- Dried Brown Lentils
- salt to taste

How to Make Bbq Lentils
- Heat 1 tablespoon of olive oil in a 2-quart saucepan over medium heat.
- Add 1 medium onion, chopped, and cook for 3 minutes, or until softened.
- Add 2 cloves garlic, minced, 1 teaspoon chili powder, and 1/2 teaspoon mustard powder.
- Cook for 1 minute, or until fragrant. Do not brown the garlic.
- Add 2 cups vegetable broth, 1/2 cup BBQ sauce, 2 tablespoons apple cider vinegar, 1 tablespoon Dijon mustard, 1 tablespoon honey, and 1 cup red lentils.
- Stir well and bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender but still hold their shape. (Red lentils cook much faster than brown or French lentils).
- If needed, add 1/4 cup water and simmer for another 5 minutes to adjust consistency.
- Season with salt and pepper to taste.
