  • Olive Oil
  • Red Onion
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon mustard powder
  • Vegetable Broth
  • Tomato Sauce
  • Balsamic Vinegar
  • Dijon Mustard
  • 1 tablespoon honey
  • Dried Brown Lentils
  • salt to taste
  • Fresh Ground Pepper

How to Make Bbq Lentils

  1. Heat 1 tablespoon of olive oil in a 2-quart saucepan over medium heat.
  2. Add 1 medium onion, chopped, and cook for 3 minutes, or until softened.
  3. Add 2 cloves garlic, minced, 1 teaspoon chili powder, and 1/2 teaspoon mustard powder.
  4. Cook for 1 minute, or until fragrant. Do not brown the garlic.
  5. Add 2 cups vegetable broth, 1/2 cup BBQ sauce, 2 tablespoons apple cider vinegar, 1 tablespoon Dijon mustard, 1 tablespoon honey, and 1 cup red lentils.
  6. Stir well and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender but still hold their shape. (Red lentils cook much faster than brown or French lentils).
  8. If needed, add 1/4 cup water and simmer for another 5 minutes to adjust consistency.
  9. Season with salt and pepper to taste.
