How to Make Beef Chili With Bacon Black Beans

  1. Dice bacon and cook in a large, heavy-bottomed Dutch oven over medium heat, stirring frequently, until browned (about 8 minutes).
  2. Remove bacon with a slotted spoon and set aside, reserving 2 tablespoons of bacon fat in the pot.
  3. Add chopped onion and bell pepper to the pot and cook, stirring occasionally, until softened and beginning to brown (about 10 minutes).
  4. Stir in minced garlic, chili powder, cumin, coriander, red pepper flakes, oregano, and cayenne pepper. Cook for 1 minute more.
  5. Increase heat to medium-high. Add half of the beef cubes and cook, breaking them up with a wooden spoon, until no longer pink and just beginning to brown (3-4 minutes).
  6. Add the remaining beef and cook, breaking up pieces with a wooden spoon, until no longer pink (3-4 minutes).
  7. Stir in the black beans, crushed tomatoes, tomato paste, and 1 1/2 teaspoons of salt.
  8. Bring the chili to a boil, then reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
  9. Remove the lid and continue to simmer for another hour, stirring occasionally, until the beef is tender and the chili is dark, rich, and slightly thickened.
  10. Stir in the cooked bacon.
  11. Taste and adjust seasoning with additional salt if needed.
  12. Serve hot, topped with your favorite condiments and a squeeze of lime.
