How to Make Beef Stew Crock Pot
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add 1.5 lbs beef stew meat, cut into 1-inch cubes, and brown on all sides. This will take about 8-10 minutes.
- Add 1 large onion, chopped, to the skillet and cook until softened, about 5 minutes.
- Transfer the browned beef and onions to your crock pot.
- Add 2 carrots, peeled and chopped, 2 celery stalks, chopped, 2 cloves garlic, minced, 1 tbsp tomato paste, 1 tsp dried thyme, 1 tsp dried rosemary, 1 bay leaf, 4 cups beef broth, 1 cup red wine (optional), 2 medium potatoes, peeled and cubed, and 1 cup frozen peas to the crock pot.
- Stir well to combine all ingredients.
- Cook on high for 4-6 hours, or on low for 8-10 hours, or until the beef is fork-tender.
- Season generously with salt and pepper to taste before serving.
