How to Make Shrimp With Tofu Stir Fry

  1. In a bowl, whisk together 1 tbsp soy sauce, cornstarch, and 1/2 tbsp of the broth to create a slurry. Add shrimp and marinate for 5 minutes.
  2. Heat 1 tbsp cooking oil in a wok or large skillet over medium-high heat.
  3. Add shrimp and stir-fry until pink and cooked through (about 2-3 minutes). Remove from pan and set aside.
  4. Add the remaining 1 tbsp of cooking oil to the wok. Add the white parts of the green onions and grated ginger. Sauté until fragrant (about 30 seconds).
  5. Add the remaining soy sauce, broth, and shiitake mushrooms (with soaking liquid) to the wok. Bring to a boil. Add tofu and vegetables (broccoli, bell peppers, carrots, snow peas).
  6. Return the shrimp to the wok. Simmer for 2 minutes until the sauce has thickened slightly.
  7. Stir in the sesame oil and green parts of the green onions. Serve immediately over rice.
